We went last year....15 days was great but still would have loved an extra week. Highlights for us was cradle mountain... a lot of the best spots require a decent walk...probably not all suited if taking an 11 month old. Dove lake is gorgeous and accessible from a carpark plus you could do a short walk. Enchant forest is also a boarded walkway. Lots of wildlife inc heaps of wombats... your little one would love it. Look up highlander cottages....magical spot...wallabies pademelons and wombats at your doorstep. Strahan is a perfect little town also....cruise for gordon river leaves from here. Freycinet lodge is another perfect spot to stay...right in national park and lots of lovely little bays and beaches to explore. Tassie is a magical place...I'll definitely be going back ...enjoy

Port Arthur is fantastic, also heaps of grassy areas to relax when the little one is tired.
