I have just started maternity leave and hubby and I will be expecting our first Bub in a few weeks time.
Looking for affordable and nutritious recipe meal ideas for dinner and lunches that I can cook fresh now and freeze (must be freezer friendly) so we can reheat and eat in the first few busy weeks home with Bub. Planning on making a few large batches of lasagne, but would love to hear other recipe ideas please.
Any healthy recipes for snacks to make during time at home before Bub arrives would be greatly appreciated too. 😃

So many! Just remember meat that has a bit of fat in it will defrost and taste as good as the day you made it, leaner meats will dry out. For recipes that call for chicken breast use chicken thighs, don't use ready cut beef strips buy a porterhouse roast and cut it yourself. I find potato doesn't defrost well so I leave it out of casseroles etc if I plan on freezing it. Same with sour cream, beef Stroganoff I will add sour cream after defrosting. Make sure your food completely cools before freezing, leave it in the fridge for a few hours to get really cold then layer the top with glad wrap so there's no air touching the food, replace the lid then freeze.
