Are you crafty?
You could make up a lovely collage of her and her husband.
Track down baby photos, toddler photos, highschool photos, etc. of them both.
The first photo they took together, any engagement photos, any lovely photos they took together, a wedding photo if you'll be giving it to them after they return home...
And have it printed onto a canvas or put into a lovely photo frame.
Or you could make them both gift baskets, with their favourite alcohol, favourite snacks, a few photos in nice frames, cigarettes or cigars if either of them smoke, whatever really.
Things that show that you know and love them.
It maybe doesn't really have the wow factor but my most favourite gift we got for our wedding was a video camera along with a beautiful note about being able to record the special moments in the life we're beginning together
