New to this cooking for just me and my son after having a husband to cook for also. My son is such a plain eater so I’m getting bored with what I am cooking for him. What’s some quick cheap meals I can make for just me?? (I will still feed the kid his plain meals lol)

Slow cook some bigger meals then freeze in single serve portions. Even if you don’t slow cook, anything you do make you can freeze in single serves. It makes for quick easy meals. You can have multiple meals in the freezer so you aren’t eating the same thing every night.
Check out skinnymixers. Yes it's thermal cooking but despite owning a thermomix I still cook most of my SM meals on the stove. If you're a comfortable cook you'll have no problem converting the recipes to pots or frypans and some already have slow cooker variations.
Some of our favourites are the curried sausages, red lentil dahl, buffalo wings (but made with chilli sauce instead), butter chicken, jeweled rice, mongolian beef and satay chicken. Those last 2 are cookbook recipes, the others and many more are freebies on the website.
One you may find mr plain meals likes is the mac and cheese with a twist.
